Part I

Where peppers
actually come from

7,000 years of history — and 500 years of renaming

The genus Capsicum

Peppers are one of the first crops
ever domesticated in the Americas

Lore

"The name tells you where a pepper comes from."

Fact

Nearly every pepper name is a lie:

  • "Pepper" — Columbus was hunting black pepper (Piper). Unrelated plant, name stuck.
  • C. chinense ("from China") — named 1776 from a plant Jacquin grew in Vienna. It's Amazonian.1
  • "Ghost pepper / Bhut Jolokia" — a natural chinense × frutescens hybrid2, from a lineage that rode to India from Trinidad as the colonial "devil's pepper" in the 1840s3

Each "new world's hottest" is largely a re-selection of the same Trinidadian material — while the island growers who bred it for generations got no credit.3

Why heat exists at all

Capsaicin is a mammal filter,
not an accident

Mammals: repelled

Rodents chew seeds to death — capsaicin drives them off. Tested on mice, rats, packrats.1

Birds: can't feel it

Birds lack the receptor response, eat the fruit whole, and plant the seeds elsewhere. "Directed deterrence."4

Your superhot patch is, botanically speaking, a bird feeder.

Lore

"The seeds are the hottest part."

Fact

Capsaicinoids are made and stored in the placenta and septum — the white ribs. Confirmed by histochemistry, radioisotope tracing, and microscopy.1

Seeds are only hot by contact. Want a milder sauce? De-rib. De-seeding alone barely helps.

"Peppers appreciate some afternoon shade."

Fact

Light is nearly a 1:1 currency for yield: in fruiting vegetables, 1% more light ≈ 0.7–1% more harvest.6

  • Peppers want 20+ mol·m⁻²·d⁻¹ DLI minimum, 30+ optimum7 — that's full sun
  • Flowers form at the internodes; light penetrating the canopy sets them
  • Shade cloth is a heat-wave tool, not a default (next slide)

The one real exception

Heat doesn't kill the plant —
it kills the fruit set

Lore

"A 5-gallon bucket is plenty for a pepper."

Fact

Meta-analysis of 65 studies: doubling root volume adds ~43% biomass, on average — and small pots throttle photosynthesis itself, not just root room.9

  • Pepper roots are fibrous and shallow — no taproot1
  • So go wide, not deep: 15-gallon and up for full-size plants
  • Medium spec that matters most: structure — fluffy, organic, moisture-holding, free-draining

"Peppers are light feeders — a big dose every two weeks is plenty."

Fact

Feed continuously and dilute — a little nutrient in every watering, the way soil actually delivers it.

  • Plant tissue takes up N-P-K in roughly a 3-1-2 fertilizer-label ratio10
  • Anything from 3-1-2 to 1-1-1 (10-10-10) works — only the dosage changes
  • Start seedlings ~1/10 strength and step up; a $15 PPM meter removes the guessing

Lore

"Switch to a bloom booster when flowers show — phosphorus makes flowers."

Fact

Phosphorus is a mineral, not a growth regulator — extra P cannot force flowering, and garden soils are rarely P-deficient.11

  • Excess P actively shuts down mycorrhizal fungi your roots depend on11
  • Runoff P feeds algal blooms in the Bay — waste with a side of harm11
  • Same logic kills the Epsom-salt-cures-everything myth: no deficiency, no benefit12

Lore

"Superhots need a tropical climate. My zone can't do it."

Fact

The genus evolved in equatorial highlands living at 65–95°F year-round1 — it never asked for Death Valley.

  • Give plants ~3 months inside that window and you get full-size, loaded plants5
  • "Northern growers can't get big yields" is the most expensive excuse in pepper growing
  • What actually fails in heat is fruit set (slide 12) — mild-summer growers have the advantage
Part III

Seed-starting lore
(the deep end)

Where experienced growers lose the most time, money, and seedlings

Lore

"Peppers grow slow — start superhots in December."

Fact

Peppers grow fast when conditions are right. 4–6 weeks indoors is enough for a plant-out-ready seedling.5

  • An old plant that sat root-bound under weak light never outperforms a young one that was provided for — pot restriction throttles photosynthesis itself9
  • Months on a windowsill buys legginess, aphids, and transplant shock — not a head start

Seedling light

Leggy seedlings aren't bad luck.
They're light debt.

Lore

"Top your peppers — more branches, double the yield."

Fact

No extension service recommends it — Minnesota and Maryland both report no research basis for topping claims.14

  • Controlled trials split: some show lower total yield, some show bigger fruit, all cultivar- and season-dependent15
  • Peppers already self-branch at every fork — light drives yield, and the plant knows how to chase it5
  • Reliable effect of topping: it delays your first harvest

Lore

"My habanero made this year's bell peppers hot!"

Fact

Impossible. This year's flesh is the mother plant's own tissue — a cross changes the seeds, so surprises show up next season.

  • But crossing is very real: bees drive outcrossing of 2–90%, averaging 42% in field studies16 — peppers only "mostly" self-pollinate1
  • Saving seed? Isolate or bag flowers — and always sow more than you need17

Lore

"Stress your plants — suffering makes them hotter."

Partly true — read the fine print

Moderate water deficit did raise capsaicinoids in habanero trials18 — but the response is genotype-dependent: in Bhut Jolokia and Orange Habanero, stress lowered total capsaicinoid yield.19

  • Severe stress loses you both yield and heat19
  • Genetics dominates: a tortured jalapeño is still a jalapeño
  • Grow the plant well; pick the variety for the heat
